North African Style Lamb Sausage
Ingredients
Lecker’s North African Lamb sausages
1 cup of cous cous
1 cup of boiling water
pinch of salt & pepper
1 tablespoon of olive oil
3 ripened tomatoes
a small sprig of fresh mint
Method
Add boiling water & oil to the couscous, cover it tight and set aside for 10 minutes.
Remove cover and gently scrape with a fork for a fluffy texture.
Add chopped mint, set aside.
Meanwhile add oil to a medium heated pan, add the sausages.
Never pierce the sausages and sautee at medium heat and not too high, otherwise the casing will burst.
Allow to rest for 4 minutes in a dish.
Add totamotes to the same pan, sautee on high for 3 minutes until soft, add salt & pepper.
Place the sauteed tomatoes on a plate, add the sausages on top and couscous on the side. Enjoy.Serves 2.
