Tuscan Lamb Sausages with Mushroom & Pinenuts Penne
Ingredients
• 8 Lecker’s Tuscan Lamb sausages (Mushroom & Pinenuts)
• 400g Fettucine
• 100g Broccoli
• Salt & Pepper
• 150ml cassata sauce
• 2 tsp olive oil
Method
Heat the oil in a frying pan. Fry the sausages for about 8 minutes until crisp and golden, cut the sausages into bite sizes.
Meanwhile, cook the pasta and chop the broccoli & par cook. Tip in the tomato cassata and chopped broccoli unto the sausages. Season and heat.
Drain the pasta, reserving some of the cooking liquid, then mix the pasta through the sauce with a splash of cooking water. Top with remaining fresh herbs.
